Our Chef

At the helm is Chef Matsubayashi Masato, whose journey perfecting tonkatsu leads to the creation of Shin Katsu. For him, tonkatsu is more than comfort food — it is a disciplined pursuit of balance, texture, and flavour, executed with deep respect for tradition. Every element of the Shin Katsu experience is treated as an art form, from curated ingredients such as the most premium pork cuts to meticulous techniques.
